Snicker Caramel Cheesecake Cookies

People always ask me how I can bake and bake and not get sick of all the sweets. Well the truth is that I do not care to eat most of the goodies I bake. I of course try all of them but it is very rare that you will catch me eating my bake goods more than once....EXCEPT for this cookie!! I have no idea what makes these suckers soooo addicting but they are. I made these last night and cannot get enough of them! 

They do take a little bit more patience than the last few bake goods I posted but believe me, it is worth it!! You really can't get anything better than graham crackers, cheesecake, caramel or snickers. Adding them all together completes life and every craving possible. They are sweet, salty and mouth watering! ENJOY.


Ingredients:

2 Cups chopped Snickers Bars
2 1/2 Cups graham cracker crumbs
2 Tablespoons granulated sugar
5 Tablespoons melted butter
2 8oz packages softened cream cheese
1 Cup granulated sugar
2 eggs
1 Tablespoon pure vanilla
3 Tablespoons caramel sauce
Step One:
Step One:
Preheat oven to 350 degrees. Unwrap Snicker bars and place into a food chopper. After you have about 2 cups, place into a small bowl and set aside for later.



Step Two:
Take graham crackers and blend them in a food chopper. I used one bag of crackers to get enough crust for all 12 cookies.

Step Three:
In a mixing bowl, mix graham crackers, melted butter and sugar. Once combined press into muffin tops to form the bottom crust. Place into oven and cook for 5-6 minutes or until brown.




 Step Four:
Mix together cream cream and sugar until smooth and creamy. Once blended add vanilla and egg until well combined. ( Make sure all your edges are scrapped clean before proceeding. ) Add caramel syrup and mix well.





Step Five:
Take cream cheese mixture and place on top of graham cracker crust. It is hard to even out the top but I found it to work best by using my fingers. The crust will move but DON'T worry.. nothing can ruin this cookie!!


Step Six:
Take chopped up snicker bars and evenly sprinkle on top of cream cheese. Place into oven for 19-25 mins. (Once again, if you live in a higher elevation, it only takes 19 mins)


Step Seven:
Take cookies out of oven and place cookie sheet on top of a cooling rack. Let the cookies cool off completely before removing from pan! (When the cookies are still warm, take a knife and go around the edges for easy removal.) Place cookies into your fridge and serve cold! :)
Step Eight:
When you are ready to serve the cookies, place them on a plate and drizzle with caramel sauce!! ENJOY.

Crock Pot BBQ Chicken Sandwhiches

Need a super easy recipe for a perfect summer night? This meal would be great for one of those summer days were the last thing you want to do is stay inside and cook all day. You will be surprised how easy this recipe is and how good it turns out!


Ingredients:
1.5 lbs chicken breasts (or about 4 nice-sized ones)

1 18 oz bottle of barbecue sauce (I like to use Sweet Baby Ray's!)
1/2 cup brown sugar
3/4 cup Italian dressing
2 Tbsp worcestershire sauce


Step One:
Set cock pot to either medium or high. (If you want this done in 5 hrs, place on low. If you want it done in 3 hours, place on high) Place chicken into crock pot!



Step Two:
Mix together brown sugar, dressing, BBQ sauce and worcestershire sauce.


Step Three:
Pour BBQ Mixture over chicken breast, cover and let cook for the desired amount of time.

Step Four:
Once the chicken is soft and easy to pull apart, take a fork and shred the chicken. Stir the chicken and sauce up, place on a bun and dig in! This will make great leftovers as well!!

Beautiful Basic Banana Bread!

I had to add the word beautiful to the title of this post because this banana bread is not just basic but it is beautiful outside the tummy and inside. I have always found that plain banana bread recipes are hard to come across and even harder to make! WE ARE IN LUCK!! I attempted ANOTHER banana bread recipe and I must say, YUMMMMMM!! It makes a huge bundt loaf so freezing part of it will be in your best interest! Let me know if you love this as much as I do! (I am going on day 4 of eating this for breakfast every morning!)

Ingredients:


2 sticks Butter
1-1/2 cup + 2 TBLS Sugar
3 whole Eggs
1-1/2 cup Mashed Ripe Bananas
4 cups + 2 TBLS Flour
1 teaspoon Baking Soda
1-1/2 teaspoon Baking Powder
1-1/2 cup Sour Cream




Step One:
Preheat oven to 350 degrees. Grease and flour bundt pan!! (This is important because if you have never made bread, it sticks and is a pain to clean up!)




Step Two:
Peel and mash about 4 banana's. Set aside.



Step Three:
Cream together sugar and butter in a separate bowl. Take eggs and add them one at a time to sugar/butter mixture. Once all eggs are mixed in, add mashed bananas and mix until blended.




Step Four:
In a LARGE mixing bowl, combine flour, baking soda and baking powder.
Step Five:
Add banana mixture and sour cream in an alternating pattern. I did 1/2 the banana mixture, 1/2  sour cream, repeat. (I also learned that having a stand alone mixer would have been awesome at this point. At least I am toning my arms while baking!!)



Step Six:
Pour the MASSIVE mixture into the bundt pan. Bake for 70 mins BUT cover the top of the bread around 30-40 mins. This will allow you to have a golden top and not burnt! 


Step Seven:
Take banana bread out of the oven and invert onto a cooling rack. Let the bread cool off before serving or in my case INHALING!

Roasted Apples N' Cream Caramel Topped Brownies

Today, I asked Craig what type of dessert he was in the mood for. He told me, "chocolate or something with apples!" So what did I decided to make? Roasted Apples N' Cream Caramel Topped Brownies! (I love killing two birds with one stone!!) Do not be afraid of the title and think that this dessert will be hard. Remember, I have NO patience and I am NOT a professional!

I will tell you that this recipe is not only "fricken fabulous" but it makes your house smell like heaven! After making this I would recommend it as a fall dessert but than again, dessert is good no matter what time of year it is!! Good luck and let me know what you think!!


Ingredients:

1 Box Pillsbury Brownie Mix, Family size, 9×13 (make sure to look at the box because this will call for separate ingredients)
8 oz softened cream cheese
1/4 Cup granulated sugar
4 Tablespoons butter
4 small-medium baking apples, peeled and thinly sliced
4 Tablespoons packed brown sugar
1 teaspoon ground cinnamon
3/4 Cup chopped walnuts (Optional)
Prepared Caramel sauce, warmed in microwave  (I use the caramel apple dip or ice cream topping)

Step One:
Preheat oven to 350 degrees. Line a 9x13 inch pan with tin foil and grease. Prepare brownie mix as directed on box and pour into pan.





Step Two:
Place cream cream and sugar into a medium size mixing bowl and blend until smooth. Take cream cheese mixture and "plop" onto brownie mix. LIGHTLY take a knife and blend in cream cheese mixture with the brownie mix. (Make sure not to press down too hard or you will rip the tin foil.)





Step Three:
Take your four apples and peel them. After they are peeled slice them into thin strips and place in a bowl. 


Step Four:
On medium heat, melt butter and than add brown sugar, cinnamon, and apples. (This is where you would add your choice of nuts, if desired) Cook for 5 mins or until apples have become soft. (Warning: this will start to make your mouth water)




Step Five:
Once apples are cooked, pour evenly over brownie and cream cheese mixture. Place pan into oven and cook for 45-55 minutes. (Higher elevations: Mine only took 40 minutes)


Step Six:
Once brownies are throughly cooked, let cool for 15-20 mins. Cut them into individual servings, pour carmel on top and DEVOUR.
